This is a fantastic unit that won’t let you down. It will work as a grill, rotisserie and a smoker with no problem. Before you buy it, decide if you are going to smoke meat. If you are, you may as well buy the optional side fire box. You’ll also want to bring a truck or van when you pick up the grill because it is large. Bring a friend along, too, because it is heavy.
The grill requires set up and plan on a couple of hours. If you just follow the instructions, you will have no problem. If you bought the optional fire box, it’ll take some work to bang out the right side of the grill where the fire box attaches. Using something like a center punch will make removal of the side easier when it comes time to attach the firebox.
Once you are done, have a friend help you lift the grill and roll it to your desired location. One thing I would recommend is to look up how to make a charcoal grate which will allow you to burn charcoal slowly and efficiently when smoking for long periods of time.
One thing to remember when smoking meat, the desired temperature is around 210 to 220 degrees Fahrenheit. As the old saying goes when it comes to smoking food, you want it low and slow.
As for the grilling part, the grill comes with cast iron grates which need to be seasoned before use. If you’ve ever used anything like a dutch oven or a wok, you’ll know that you don’t want to scrub the grates too hard when cleaning them otherwise they’ll lose the non-stick coating that comes from many hours of use.
The two things I didn’t like about the Chargriller were the the grate lifter and the optional grill cover. The cover is very flimsy and fell apart after one winter in my backyard in Utah. The grate lifter broke in half when I accidentally dropped it on my concrete patio.
Overall, this has been a great smoker and grill. The most meat that I ever smoked in this unit was about 40 pounds of pulled pork for a church function. You could smell the smoker going several blocks away.
